Pinot Noir Rosé Brut from the house Weingut Eymann, based in the wine region Pfalz in southern-western Germany, is a dry, fresh and fruity sparkling rosé wine, exclusively made from Pinot Noir grapes. This Sekt, as sparkling wine is called in Germany, has a beautiful pink colour with a persistent mousse and many fine bubbles that intensify the delicate and fresh aromas of red currant, raspberry, lime, nuts and brioche. The mouth-watering palate is dry with good structure and almost crunchy mouthfeel and the flavours are reminiscent of strawberry, grapefruit, pie crust as well as chalky and earthy notes. The fruity flavours are balanced with a vivid acidity, making the wine easy to enjoy on all occasions. The wine has a low residual sugar level of only 3 grams/litre and it appears very elegant and balanced with a refreshing finish in the end. Serve it chilled with light dishes such as shellfish, charcuterie, tapas, fresh melon and strawberry desserts or simply as an aperitif.

 

Rosé Extra Brut is made in much the same way as Champagne in what is known as the Traditional Method. This is where the wine is fermented twice, with the second fermentation and maturation takes place in the bottle. This method creates a beautiful mousse and delicate aromas typically of bread, biscuits and nuts. The base wine for Blanc de Noirs Extra Brut ferments with native yeast in large neutral oak barrels before it is transferred into bottles where the wine rests for about 30 months.

 

Vincent Eymann took over family-owned house situated in the small village Gönnheim after his father in 1984. He cultivates 15 hectares of vineyards located on the steep slopes by the Rhine river with strictly organic and biodynamic methods. The vines are up to 50 years old and grow on a complex mosaic of various soil types and minerals. Eymann is passionate about creating authentic wines in harmony with nature, and above all for the health of our children and future generations. All his wines are certified organic and biodynamic since 2005, and he is a pioneer of this approach in the area. Biodynamic agriculture is very similar to organic farming, but it includes various esoteric concepts drawn from the ideas of Rudolf Steiner and Maria Thun. The goal is to grow healthy vines with the best fruit quality as possible as well as supporting nature and biodiversity.
